- Get your eggs out of the fridge as they are better used at room temperature.
- Line your square cake pan with parchment paper, covering the bottom and two opposite sides. Leave extra paper over the sides to lift the brownies out after baking. Grease the other two sides of the pan to prevent sticking.
- Preheat your oven to 178 °C / 350 °F.
Ingredients
- 125g (1/2 cup) hot, melted canna butter
- 200g (1 cup) granulated sugar
- 1 teaspoon vanilla extract
- 94g (3/4 cup) all-purpose flour
- 80g (2/3 cup) cocoa powder
- 1/2 teaspoon salt
- 2 large eggs at room temperature
- 2 tablespoons chocolate chips (optional)
Method
- Heat your canna butter in the mixing bowl until fully melted. Ensure your melted canna butter is hot, and use room-temperature eggs.
- Once the sugar is dissolved, let the mixture cool down a little – if you were to add your eggs now they would cook and become scrambled eggs.
- Add the other ingredients one at a time on top of each other. Add the eggs and whisk it all together. You may find it easier to use a silicon spatula. Once you have got a smooth batter, add the chocolate chips or some chopped walnuts instead, if you prefer.
You may have noticed that there is no baking powder or other raising agent? This is because this pan-bake is designed to be dense and gooey. - Bake at 178 °C / 350 °F for 30 minutes. Poke a table knife into the centre to see if it is cooked. A little bit gooey is nice. Put the pan aside and leave the cake to cool for 20 minutes. The sides of the brownie will pull away from the sides, making it easy to lift out of the pan with the parchment paper.
- Transfer the brownie to a cutting board and divide it into 20 equal pieces.
Adjusting Potency of the Cannabis Brownies
When you make your canna butter, ensure you make a note of how much cannabis buds you have used. You can use any cannabis strain you like, be it indica or sativa or a hybrid. Remember that different strains have different levels of THC and CBD as well as a variety of different terpenes.
If you are able to grow your own, you can be in control of what goes in. If you get your cannabis at a dispensary, you will be able to get all the information you need.
I typically use 2 grams of cannabis flower ground up in a grinder.
